Electronics issue

I've been having a recurring problem with '08 while driving on the highway. It happens every couple of months and has happened 3 times so far. I have about 89K miles on it now.
Dashboard Symptoms:
Speedometer stops working (Tach still works.)
Avg MPG replaced by --.-
Low fuel light comes one
Service engine light comes on
Airbag light comes on
Tire pressure eventually came on
Car handles normal while at highway speeds, but need to give it a lot of gas at lower speeds to get it going.
After turning the car off and restarting it, the tranny lurches when going into reverse and drive. After driving a bit, all is well again.

To me, it seems like a computer freezing issue and then tranny needs to relearn itself when I restart the car.
